Introduction -- Chapter 1 -- Lesson Assignments

For submission via e-mail, type your answers in a text-only file (unless otherwise directed in the specific assignment). Do not send the message until you have completed all parts of the assignment, then send them all in one message. Text-only documents may be created in a separate word processing program, then copied and pasted into an e-mail message; Microsoft Word documents must be formatted as directed in the introduction and e-mailed as attachments. Submit your Lesson Assignment according to the directions given for e-mail.


CHAPTER PROJECTS
For this project, you will contact a chef (either in person or by phone) and conduct a short interview. If you have trouble finding a chef in your area, please notify the instructor for assistance. You are free to ask a variety of questions, but be sure to cover at least the following topics:

  • The name of the chef and where he/she is currently working.
  • Where the chef received training.
  • What made the chef want to get into the food industry.
  • What the chef thinks is the hardest part of job.
  • What the chef thinks is the best part of job.

Submit the following to complete the assignment:

  • A one- to two-page report on the information gathered from the interview.
  • A copy of the thank-you note you sent to the chef for allowing you to interview him/her.

Below is a loose suggestion for the thank-you letter; it should be brief, but should convey your sincere appreciation.

Dear __________,

I wanted to thank you for allowing me to interview you last week. The information on (here put in the information you found especially interesting) was very useful in assisting me better understand (here you could say 'your profession as a chef' or 'some of the job responsibilities a chef encounters every day'). I appreciate your willingness to assist me in learning more about the foodservice industry. Thanks again.

LAB
You will need to identify two or three quantity foodservice facilities where you would like to complete your lab work. You can do this by looking in the phone book or simply thinking about facilities with which you're already familiar. Then you need to contact the manager at one of the facilities to see if they would be a possibility for your mentor. Show him/her the partnership agreement letter and explain that you need to work in their kitchen approximately 50 total hours over a six-month period. Be sure to let the manager know that you will arrange ahead of time when you will work, and that you will do it at his/her convenience.

Once you have decided on a facility and gotten the go-ahead from the manager, contact your instructor for approval. When you receive approval, complete the partnership agreement and submit it as part of this Lesson One Assignment.
