Introduction: Food Systems Management I
Lesson AssignmentsFor each lesson, you will have a lesson assignment that consists of some combination of chapter project assignment, essay questions, recipe calculations, and lab work.
For Lessons Five, Six, and Eleven, you will answer chapter essay assignments and submit them via email according to the directions given in the Policies and Forms Guide for e-mail. Each essay assignment is worth 10 points. Format all chapter project assignments as follows: 1-inch margins, double-spaced, with a professional-looking font such as Times or Arial (something rather conventional--no oddities, please!). If at all possible, please use Microsoft Word. You will e-mail these assignments as attachments (not in the body of your e-mail) toUniversity College (instead of directly to the instructor, as with the chapter essays). Each chapter project is worth points. Submit your assignments according to the directions given in the Policies and Forms Guide for e-mail.
The instructor must approve of the selected foodservice facility before you begin your actual lab work. When the quantity foodservice facility is approved by your instructor, the mentor will sign a partnership agreement. You must submit the signed agreement to the instructor when you submit the Lesson One Assignment. The specific kitchen stations you will need to work in are outlined in the schedule of assignments. Please read all information in the textbook that pertains to the station in which you will be working; also, view all appropriate video clips on the CD-ROM that accompanies the text (e.g., measuring if you'll be working in the bakeshop, chopping if you're in salad prep or side-dish prep, and so forth). You must wear a uniform when working in the quantity foodservice facility. If the facility does not have a specific uniform, then you are required to wear black pants and shoes, black belt, a white long-sleeved button-down shirt, and a black bowtie. You are not to wear jewelry (except for wedding rings or anything required by your religion) or nail polish. Head and facial hair must have some sort of restraint--either with hats or hairnets. You will e-mail your lab reports to the instructor as attachments. After you finish all lab work, your mentor will submit a short evaluation, which will be part of your grade. It is your responsibility to provide the mentor with the evaluation form and the address ofUniversity College. You will be required to submit a paper outlining your experience at the completion of your lab work. Mail your final paper via the post office so the instructor will have a printed copy. Your mentor will also mail your evaluation directly to the instructor via snail mail. |
